Vanilla Chia Pudding
Pudding for breakfast anyone?
I am honestly in LOVE! I have discovered the most delicious & nutritious breakfast option to kickstart my morning! And the best part? It’s a pudding!
With no mess, no fuss and only 4 key ingredients, it is so simple to make.
The main ingredients? Coconut milk and chia seeds.
Coconut milk is rich and creamy and high in vitamins, fibre and minerals such as iron, calcium & magnesium; and is a great dairy milk substitute for those who are lactose intolerant.
It includes chia seeds which are high in protein, anti-inflammatory omega-3s and has more fibre than flaxseed. Chia seeds swell in liquid to create a gel-like substance which thickens the mixture.
Mix all ingredients together in a jar and place in fridge overnight or until set. It’s that easy.
Top with berries or fresh fruit in the morning, or try some other fun variations to mix things up –
Add goji berries, cacao nibs and coconut flakes.
Add raw cacao powder to the mixture before setting to make chocolate pudding.
Add cinnamon & nutmeg to the mixture and serve with apple slices on top.
