It’s my baby boy’s 5th birthday today!
The day started early with many hours of Lego building before he requested his favourite breakfast … FLAPJACKS!
These can be whipped up in a flash, and smothered in berries, fresh fruit and a drizzle of maple syrup.
(Makes 4-5 flapjacks)
½ cup gluten free flour *
1 scoop protein powder **
½ tablespoon coconut sugar
½ teaspoon baking powder
Pinch of salt
1 small banana
1 tablespoon Coconut Milk
1 teaspoon vanilla extract
1 teaspoon coconut oil
Topping Options: Berries, fresh fruit slices, maple, agave or rice syrup
Combine flour, protein powder, coconut sugar, baking powder and salt in a bowl.
Separately, mash the banana until smooth, and add milk and vanilla.
Mix the wet ingredients into the bowl of dry ingredients until well combined. It’s quite a firm batter, but if it’s too dry add a little more milk.
Melt coconut oil in a frying pan over medium heat.
Spoon about a tablespoon of mixture at a time into the pan, and gently press down to flatten slightly.
Flip each flapjack over when golden.
Serve with berries, slices of fresh fruit and a drizzle of your favourite liquid sweetener.
This recipe makes about 4-5 flapjacks. I usually double this for our family of 4.
