Flourless Banana Pancakes
When you wake up on your birthday to flourless banana pancakes drizzled with raspberries and maple syrup, you know you are loved.
These fun and delicious pancakes are quick ‘n easy to make and are absolutely delicious!
Ingredients
(Makes 8 small pancakes)
2 ripe bananas
2 medium free range eggs
Pinch of baking powder
1/2 teaspoon of vanilla extract
1 teaspoon of coconut oil
Topping ideas (optional):
Maple syrup / honey
Raspberries / mixed berries
Freshly sliced fruit
Cacao nibs
Goji berries
Method
Mash the banana with a fork until smooth.
Whisk in the eggs, baking powder and vanilla.
Heat a large non-stick frying pan over a medium heat and add half of the coconut oil.
Spoon batter into the pan (you can do two pancakes at a time) and cook for 1-2 mins on each side.
Remove from pan and repeat the process with the remaining oil and batter.
Top the pancakes with your favourite toppings.
