Strawberry Ice Lollies
My boys have such different tastes. I really shouldn’t ask questions like these, but when I ask the boys which flavour ice lolly they want me to make I get two very different answers. Judah, my youngest, yells ‘MANGO please’ and Oscar, my oldest, yells ‘STRAWBERRY!’ So I make both.
These strawberry ice-lollies are really delicious, and with only 3 ingredients they are quick and easy to whizz up.
A great idea is to add slices or chunks of fresh fruit into the mould before pouring in the mixture.
(Makes about 6 ice lollies depending on size of your mould)
1 cup frozen strawberries (or variety of mixed berries)
100ml full cream natural yoghurt (or coconut milk)
1 teaspoon honey or maple syrup (or more if you prefer sweeter)
Whizz up the strawberries, yoghurt and honey in a blender or food processor.
Taste, and add a little more sweetener if you think it needs it.
Pour or spoon the strawberry mixture into the ice lolly moulds, then pop a stick into each one.
Put the ice lollies in the freezer for at least 4 hours (over night is best) or until solid.
