Oodles of Zoodles
There is no doubt I love kitchen gadgets! One of my best buys this year was definitely my spiralizer.
Spiralizing courgettes to make courgetti or zoodles (whichever one you prefer) is a super substitute for spaghetti or noodles in any dish if you want to avoid carbs or grain.
You’ll need
Courgettes (aka baby marrows or zucchini)
Spiralizer
Your favourite toppings or sauce
Method
Simply twist a washed courgette through a spiralizer and repeat until you have enough per person (It does shrink slightly once pan-fried).
Use raw or you can pan-fry the courgetti in olive oil, coconut oil or butter with a small dollop of garlic and use as you would regular spaghetti.
Toss through your favourite toppings such as fried mushrooms, cooked bacon, olives and spring onions; or your favourite pasta sauce such as pesto sauce.
Season to taste.
