Stuck for lunch box ideas?

My young boys LOVE pitas! We fill them with AVO or cheese, dip them in hummus, and use them as mini pizza bases. They are also a great lunch box alternative to sandwiches. Not only are the store-bought ones expensive, but they have added sugar, salt, additives & preservatives.

We came up with a quick and simple gluten-free, yeast-free, sugar-free recipe for making our own … and the boys can’t tell the difference.

Ingredients

(Makes about 10 mini pitas)

1.5 cups of flour (I use Health Connection Gluten-free General Purpose Flour)

1/2 teaspoon of himalayan salt 

2 Tablespoons of natural yoghurt

1 Tablespoon of olive oil

1/4 cup water

 

 

Method

Preheat the oven to max heat.

Mix the flour, salt, yoghurt and olive oil together in a mixing bowl, followed by adding the water slowly while mixing until it is at the right consistency to knead.

Knead until dough is elastic / springy. Leave to stand for 5-10 minutes.

Roll out on a floured surface and cut circles with a round cutter or drinking glass.

Place in hot oven and cook for no more than 10 minutes (keep an eye on them during this time as they cook quickly).

Notes

Best served hot out of the oven! Split with a knife and fill with your favourite fillings. Alternatively use as a mini pizza base by spreading tomato paste on top and sprinkling with grated mozzarella cheese, as well as your favourite toppings. Place back in the oven until the cheese has melted.

Quite frankly, before they get to the dinner table, I smother one with butter, add a dash of salt and sneakily tuck in! Delish!
