King of Pop – Coconut Oil Popcorn
I can’t remember when I last snuggled up with my boys on the couch watching a movie and tucking into a bowl of popcorn! With a sudden change in weather an afternoon of movies & popcorn was in order.
Avoiding popcorn for so long after reading the horrific effects of genetically modified (GMO) corn and the health nightmare of microwave popcorn, I was delighted to come across GMO-free popcorn kernels and learn about healthier ways of making popcorn for the family!
My boys’ new favourite is adding “cheese sprinkles” to their popcorn. Nutritional yeast is an inactive yeast that not only has a nutty parmesan-cheese like taste, but is high in Vitamin B12, protein, fibre and a great source of folic acid. It’s fast becoming our topping for popcorn, pasta, rice and soup.
Ingredients
1/2 cup non-GMO popcorn kernels
1 tablespoon organic virgin coconut oil
Himalayan salt to taste
Nutritional yeast (optional)
Large pot with lid
Large popcorn bowl
and a great movie!
Method
Add the coconut oil to the pan and heat until oil has melted.
Place the popcorn kernels into the pan and cover with a lid.
Shake the pan every 10 seconds until the popping slows down.
When the popping slows down to a pop every 2-3 seconds remove pan from the heat. (Nothing worse than the smell of burnt popcorn!)
Pour into a bowl, add salt and nutritional yeast to taste and serve.
Snuggle up and enjoy!
