Cheap as chips!

Have you tried kale chips? I have seen bags of Kale Chips for sale in health shops, but let’s be honest, they certainly have never got my attention! Especially with that price tag!

A friend gave me a bag of homemade Kale Chips before Christmas. I opened the bag on my way home to try just one, and within minutes I wolfed down the entire bag and even attempted to lick the bag while driving! Oh my! Who would have thought you could get so many flavours from greens!

With low iron levels, I often buy Kale in an attempt to eat more greens, but honestly, these usually wilt and end up in the bin. I now can’t get through Kale fast enough after discovering how to dress these up and and make them a family favourite!

Ingredients

1 bunch kale leaves

½ tablespoon extra virgin olive oil or melted coconut oil

½ cup crushed cashew nuts or macadamia nuts

1½ tablespoons nutritional yeast

¾ teaspoon chilli powder

½ teaspoon smoked paprika

⅛ teaspoon cayenne pepper

¼ teaspoon pink Himalayan salt

* These ingredients are just a guide. Play around with different flavours. I also add lemon or lime juice which is so fresh and tasty!

Method

Preheat oven to 150 deg C.

Wash leaves well and leave out to dry thoroughly.

Remove the thick stems from the kale leaves and roughly tear it up into large pieces (you can use the stems in your smoothies).

Add kale leaves into a large bowl. Massage in the oil until the leaves are well coated. Now sprinkle on the other ingredients and toss to combine.

Spread out the kale onto the prepared baking sheet into a single layer, being sure not to overlap the leaves.

Bake for 10 minutes, rotate the pan, and bake for another 12-15 minutes more until the kale begins to firm up. The kale will shrink, but this is normal.

Cool the kale on the sheet for 3 minutes before digging in! This really makes all the difference! 

Notes

If you are fortunate to have a dehydrator, then do try dehydrating these. Holding thumbs for one for my birthday (let’s hope hubby reads my posts!).
