Raw Chocolate Peanut Butter Squares

AT LAST! I have a recipe for a healthier (and tastier) version of one of my all time favourite party treats!

As far back as I can remember my mom has made Peanut Butter Rice Krispie Squares for every occasion … be it a picnic, birthday party, kitchen tea.

As I sat polishing off quite a few of these addictive squares at my son’s 2nd birthday party, I was adamant to find an alternative recipe that didn’t include margarine, golden syrup, Rice Krispies and dairy milk chocolate.

I am delighted with the way these turned out, so I just have to share it.

 

Ingredients

Base

1 cup desiccated coconut

3/4 cup raw oats

1/4 cup honey (or agave or maple syrup)

1/2 cup peanut butter

1/8 cup coconut oil, melted

1/4 teaspoon cinnamon

1 teaspoon vanilla extract

pinch of Himalayan salt (if peanut butter is unsalted)

Chocolate topping

1/2 batch of raw chocolate (see separate recipe) or use 2 melted dark chocolate bars.

Method

Squares

Blend all of the base ingredients in a food processor until the ingredients combine to a thick sticky consistency.

If too dry add more peanut butter.

Press the mixture into a silicone loaf tin or mini cupcake tin for individual cups.

Chocolate 

Pour the melted chocolate on the peanut butter mixture.

Place in fridge until set.
