Macadamia Nut Dark Chocolate

CHOCOLATE IS GOOD FOR YOU! Guess you thought you would never hear these words?

This week I read up about cacao powder (not to be mixed up with store-bought cocoa powder) and discovered that chocolate can actually be good for you! Cacao powder is a superfood, a natural mood elevator, an anti-depressant and rich in antioxidants.

I popped out to my local health store and bought my first box. I have since been making something chocolatey every day, GUILT-FREE! What a treat!

Another favourite I can’t do without is my jar of coconut oil. I use it in the kitchen and also as a hand cream, night moisturiser and lip balm. Mmm, and the fragrance is just delicious!

These aren’t your everyday pantry ingredients, but they are fast becoming my basics!

Ingredients

For one slab (roughly 150g):

1/2 cup cacao powder

1/4 cup coconut oil (melted)

Just under 1/4 cup liquid sweetener (Agave syrup, rice syrup, date syrup or maple syrup

Pinch of pink Himalayan salt

1 cup raw macadamia nuts 

Method

Slowly melt the coconut oil in a stainless steel mixing bowl over a bowl of hot water until it is a clear liquid.

Add the cacao powder, sweetener of choice, salt and the nuts.

Pour into a mould of your choice or once slightly cooled (and no longer too runny) spread onto baking paper and shape with a knife. Wrap the chocolate in the baking paper and place in the fridge (if you aren’t patient, put it in the freezer). It doesn’t need long to set.
