Vanilla Coconut Drops

With a pressing deadline I should have been working, but when I received a message from a friend to say I HAVE to try these coconut cookies, I dropped what I was doing and headed straight for the kitchen.

Looking at the ingredients I realised I didn’t have Tahini! Thanks to google and a bag of sesame seeds in the pantry, I attempted to make my own Tahini. Ok, so it didn’t look as creamy as store-bought Tahini, but I will blame that on my food-processor! With that done, I whipped up these heavenly coconut drops within minutes and placed them in the freezer!

The following chilly morning my family and I sat in front of a blazing fire drinking tea and munching on these delights. In one sitting we gobbled up the entire batch! Needless to say I went straight back to the kitchen to whip up another batch, but this time with a twist. (See Nut & Seed Energy Bars recipe).

Ingredients

2 cups dried shredded organic coconut

1/2 cup tahini (sesame seed butter)

1/2 cup honey (or agave nectar or maple syrup)

1/2 cup coconut oil (melted)

1 teaspoon pure vanilla extract

1/2 teaspoon Himalayan salt (or sea salt)

Method

Add all ingredients into large bowl, except shredded coconut.

Stir with a spoon until well mixed.

Once combined, add shredded coconut. Stir again until well combined.

Drop cookies onto a cookie sheet. Cover and freeze for at least 30 minutes. (Cookies will harden when cooled.)

Store leftover raw vanilla drop cookies in freezer.
