Raw Snicker Bars
I’m guessing by now you’ve picked up that I have a sweet tooth!
After cutting out wheat, refined sugar and dairy from my diet I can’t help but try find delicious alternatives. And honestly, I often prefer the healthier version to the original.
Store-bought Snicker Bars consist of nougat, peanuts and caramel with a chocolate coating … and of course corn syrup, refined sugar and artificial flavours.
These raw snicker bars are simple to make, there is no baking required and really do satisfy the afternoon munchies! You’ll have your kids begging you to make some more!
Ingredients
Nougat Base:
125g ground rolled oats or oat flour
125g ground almonds
60ml maple syrup or honey
2 tablespoons coconut oil
1 ½ teaspoons vanilla extract
Peanut Caramel:
350g dates
¼ teaspoon salt
95g peanut butter
½ teaspoon vanilla extract
1 tablespoon coconut oil
40g peanuts (preferably toasted or raw)
20ml water (if needed)
Raw Chocolate:
100g coconut oil
60g cacao powder
2 teaspoons vanilla extract
Pinch salt
4 tablespoons maple syrup or honey
Method
Nougat Base:
If using rolled oats, place them in a food processor and grind to a flour like consistency.
Add all the other ingredients and pulse until it comes together when you pinch it. If it is still too crumbly to hold together, add 1/2 – 1 tablespoons of water.
Press in to a tin (I use a silicone loaf pan) and place in the freezer while you make the caramel peanut butter filling.
Peanut Caramel:
Blend the dates until they form a paste and then add the other ingredients, except for the whole peanuts, blending until a smooth caramel forms.
Add the peanuts in and pulse a few times so that they are combined with the caramel mixture.
Spread onto the base and then return it to the freezer.
Raw Chocolate Topping:
Melt the Coconut oil in a stainless steel mixing bowl over a bowl of hot water. (With the heat we’re having your oil should already be liquid).
Once melted add all the other ingredients and stir until you have a nice smooth chocolate.
Pour onto the other two layers and leave to set in the freezer for at least an hour.
Remove from the freezer 10-15 minutes before slicing to prevent it from cracking.
Notes
If you have a peanut allergy or prefer not to eat legumes, you can substitute the peanut butter and peanuts for almond butter or an alternative nut butter and nuts.
