Raspberry White Chocolate

I DID IT!  It’s been my mission to make raw dairy free white chocolate for years!

And to be honest, it’s pretty darn close to the real thing.

Happy Easter to me!

Ingredients

½ cup melted cacao butter

¼ cup macadamia butter, at room temperature (cashew butter would work well too)

3 tablespoons maple syrup (or your choice of liquid sweetener)

1 teaspoon vanilla extract

¼ cup raspberries

1 teaspoon mesquite powder (optional)

Method

Place all ingredients, except raspberries, in a blender or processor, and blend until the mixture is smooth.

Pour the blended mixture into your choice of chocolate mould or dish.

Sprinkle over raspberries and press down gently so the raspberries sink into the chocolate mixture.

Place in the freezer and allow it to set for at least an hour.
