Lemon Crunch Energy Balls

I have an obsession with date balls at the moment. I can’t stop playing with different flavours.
When I made these I got stuck on this one flavour and have made them over and over (and over) again!

I love the tart lemon zest, the hint of ginger and the crunch of the buckwheat cereal.
I can never stop at one … or two … (I’ll stop there, or I’d be telling!).

Ingredients

(Makes about 12 balls)

1 cup soaked dates (pitted) 

1 tablespoon extra virgin organic coconut oil

1/4 cup Health Connection Sprouted Buckwheat Cereal * (see notes for alternative ingredients)

Lemon zest from 1/4 of a lemon

Small pinch of organic ginger powder

1 heaped tablespoon cacao powder

 

 

 

 

 

 

 

 

Method

Ensure your dates are pitted and soak the dates in warm water until soft.

Melt the coconut oil (if solid).

Finely grate rind from 1/4 of a lemon.

Add the soaked and drained dates, melted coconut oil and lemon zest to a food processor. Process for a few minutes. 

Add the cereal mix, a pinch of ginger powder (optional) and the cacao powder and process until combined. (I know it’s ready when the mixture clumps into one giant ball.)

To avoid sticky hands, I place the mixture in the fridge (or freezer) for half hour before rolling into balls.

Roll into balls and dust with sifted cacao powder.

Store in the fridge.

Notes

  • If you are not in South Africa you can substitute the Health Connection Sprouted Buckwheat Cereal with the following ingredients – rolled oats, sprouted buckwheat flakes, puffed brown rice, raisins, almond shavings and goji berries.
