Grain Free Granola Clusters
My husband has been asking me to make granola for months! After attempting this one, let’s just say that I won’t be trying any other recipe. This one is a keeper!
The secret? Use egg white to create the clusters!
You can mix it up a bit by using different nut, seed & dried fruit combinations.

Ingredients
1 cup almond flakes
1 cup raw cashews
1 cup walnuts (I use walnut pieces)
½ cup macadamia nuts
½ cup brazil nuts
1 cup mixed seeds (sunflower, pumpkin, sesame, flax)
½ cup raisins
½ cup dried cranberries
1 cup coconut flakes
1 egg white
2 tablespoons water
3 tablespoons organic virgin coconut oil
⅓ cup honey or maple syrup
1 teaspoon vanilla extract
½ teaspoon ground cinnamon
½ teaspoon Himalayan salt
Method
Preheat the oven to 150 degrees C and line a baking sheet with parchment paper.
Add the nuts, seeds & coconut to a blender and pulse a few times to chop slightly (but don’t grind them into a fine meal).
Whisk together the egg white with the water until bubbly and slightly foamy.
Add melted coconut oil, honey, vanilla, cinnamon and salt to the egg white/water mixture and whisk together well.
Add the nut & seed mixture to the liquid mixture, along with the dried cranberries and raisins. Stir everything well to make sure it is all coated.
Spread the granola mixture evenly on the parchment-lined baking sheet and bake for 20 minutes or until golden-brown and crispy, stirring once after 10 minutes.
Remove granola from the oven and allow it to sit for 10 minutes without stirring it – this is where the clustering happens, so be sure to not skip this step!!
Use a spatula to get under the granola and release the large clusters.
Once cool, store the granola in a sealable jar.
Eat granola with your favourite milk or yogurt and fruit.
I add goji berries and cacao nibs with a drizzle of maple syrup.
