Grain free Caramel Doughnuts
My 5 year old has an obsession with doughnuts! If he had a choice, any reward due or daddy or mommy date would have to involve doughnuts! Knowing full well that the store-bought doughnuts are not exactly the best option, I made it my mission to not only find a good alternative doughnut recipe, but if I was successful, I’d go as far as buying a doughnut machine.
MISSION: COMPLETE! These doughnuts are absolutely delicious and my boys are in their doughnut heaven.
After my first attempt at making a batch in the oven in a mini cupcake mould to test it out, and my boys getting to decorate them with homemade ‘caramel’ icing and sprinkles, we had a winner! We purchased a mini doughnut maker and haven’t looked back. These are so simple and such a lot of fun to make.
Ingredients
Batter
4 large eggs
¼ cup ghee (or butter)
¼ cup coconut milk, warm
¼ cup honey
1 teaspoon apple cider vinegar
1 teaspoon vanilla extract
½ cup coconut flour
½ teaspoon baking soda
¼ teaspoon salt
Caramel Topping
½ cup honey
1½ tablespoons almond butter (or try chocolate almond butter)
3 teaspoons ghee (or butter)
1 teaspoon water
½ teaspoon vanilla extract
Method
Batter
Preheat a doughnut maker, or if using the oven preheat the oven to 180 deg C.
Beat the eggs with the ghee (or butter) on medium-high speed until creamy.
Add the milk, honey, vinegar, and vanilla and beat again until combined.
Sift the remaining dry ingredients into the bowl. Beat on high until smooth, for about 30 seconds.
Pour or spoon the batter into the doughnut mould.
Cook until the doughnut machine indicator light goes off (I cook for 3 minutes, then turn for 1 minute).
For the oven, bake for 17 minutes.
Remove the doughnuts and cool on a wire rack.
Caramel Topping
Bring the honey to low boil and simmer for 8-10 minutes until the honey is deep colour.
Remove from the heat and add the almond butter, ghee (or butter), vanilla, and water. Let it cool slightly until it is thick enough for dipping.
Dip each doughnut in the glaze. Place on a wire rack to cool.
And when there is no time to make a topping, simply smear honey on top and sprinkle on some coconut sugar and cinnamon.
