Coconut Chips
Well there you have it! Just when I thought there couldn’t possibly be another use for coconut, I came across this awesome snack that is absolutely delicious! Where have these been all my life?
I love to snack. We all get the munchies right? And these just hit the spot!
You can eat them like crisps, sprinkle them on yoghurt, oats, curries, oh I could go on … The honest truth, a jar never lasts long enough to try it on any of these dishes.
Ingredients
1 cup coconut flakes (the big ones)
½ teaspoon virgin organic coconut oil
¼ teaspoon ground cinnamon
¼ teaspoon sea salt (add more if you like it extra salty)
Method
Heat a non-stick pan and add a small dollop of coconut oil to the pan.
Add the coconut flakes, cinnamon and salt to the pan.
Stir frequently. They begin to crisp and turn brown pretty quickly. Remove from the heat and allow to cool.
Store in an air-tight container.
Notes
You can add raw cacao powder to make chocolate coconut chips.
Add some chilli if you like it hot!
You can leave out the coconut oil, I added just a bit to ensure the salt and cinnamon stuck to the flakes.
