Coconut Butter (Coconut Manna)
Coconut Butter is my new find. Also known as coconut manna, this smooth creamy butter is incredibly delicious just as it is by the spoonful, a fun spread on banana bread and a base for decadent treats such as Coconut Lemon Bars.
As long as you have a powerful blender, it is as easy as making your favourite nut butter.
Ingredients
(Makes 1/2 to 3/4 cup of coconut butter)
2 cups dried unsweetened shredded coconut
Method
Place the shredded coconut in a powerful blender *.
Blend until smooth and silky.
It takes approximately 10 minutes, but this would depend on your blender.
Notes
* I would suggest only making this at home if you have a powerful blender. I blend for a few minutes at a time, give the motor a break, then go again. One day I’m hoping to have a Vitamix and blitz in no time.
