Chocolate Popsies
Are you looking for healthy alternative snacks for the holidays? I know my boys expect a ‘treat’ on the weekend and I’m certain they will be begging me for something sweet every day of the holidays!
With a long school holiday fast approaching I’m trying and testing some new healthier treats for the kids (and adults) to enjoy!
My boys eat Puffed Brown Rice for breakfast occasionally, and have given them the name “Popsies”! (Hence the name of the recipe.)
Not only do they take 5 minutes to prepare, they are also so easy to make that your kids can enjoy making them too!
Ingredients
¼ cup puffed brown rice ( I use the Health Connection brand)
½ cup cacao powder
¼ cup virgin coconut oil
Sweetener to taste (raw honey, agave or maple syrup)
1 teaspoon vanilla extract
Pinch Himalayan salt
Almond butter or peanut butter (optional)
Method
Melt coconut oil in a metal bowl over a bowl of hot water. Still over the heat, stir in the sweetener (I used a splash of agave and a drizzle of maple), cacao powder, vanilla extract and pinch of salt until smooth. Taste the mixture and see if it is sweet enough. If not add more sweetener.
Stir in the popped rice.
Pour the mixture into your choice of mould. I use a silicone loaf pan. If you don’t have silicone bakeware you can use wax paper in your dish.
Chill in the fridge until firm (about 30 minutes).
Slice into squares, then store in the fridge or freezer.
