Banana Boats

I have a fond memory of my mom making banana boats on the fire for my besties and I at one of my childhood birthday parties. Bananas sliced lengthways and filled with caramel, marshmallows and blocks of milk chocolate; wrapped in foil and put on the fire until warm and gooey. Mmmm.

Feeling the need for an energy boost, I grabbed a banana from the fruit bowl … and before I knew it I had recreated a healthier version of banana boats. It was a struggle to snap a photo without a little hand in the way … my boys could not WAIT to get stuck in!

Not sure what you are planning for Friday night, but with the unexpected cold weather we have been having, I’m sensing a night in front of the fire … homemade pizzas and gooey banana boats for dessert.

Ingredients

Ripe bananas

Nut Butter (Macadamia Butter, Peanut Butter or Almond Butter) 

Pecan Nut Sprinkles (you can use ground almonds or crushed peanuts)

Desiccated Coconut

Dark Chocolate Chips

Goji Berries 

Agave Syrup (or honey or maple syrup)

 

Method

 

Slice the bananas lengthways.

Fill the slit with your choice of nut butter.

Decorate by sprinkling the rest of the ingredients in the slit.

Drizzle with syrup.

Notes

If you are going to heat your banana boats, leave the bananas in the peel, split the banana, fill it with your favourite toppings and wrap the bananas in foil. Either place on campfire or put in the oven until the chocolate has melted.
