Coconut Lemon Bars
Just when I thought I knew every use for coconut I discovered coconut butter!
Also known as coconut manna, coconut butter is simply blended coconut meat. I used my first batch of coconut butter to make these raw refreshing coconut lemon bars.
Coconut butter will now be a staple in my kitchen! And so will these bars!
Ingredients
Zest of 1 lemon
Juice of 1 lemon
½ cup coconut butter (coconut manna)
½ cup coconut oil, melted
2 tablespoons maple syrup or honey
Method
Melt the coconut oil and coconut butter in a mixing bowl over a bowl of hot water.
Add the rest of the ingredients and mix until smooth and creamy.
Pour into your preference of mould or a baking dish (I use a silicone loaf pan).
Place in freezer for 10 minutes to harden.
Pop out of moulds or take out of dish and slice.
Garnish with zest (optional).
