Nut and Seed Energy Bars

I have always said that I cannot cook or bake unless I follow a recipe STEP-BY-STEP, so when I took an existing recipe and made it my own, I was just a little bit proud.
My husband, bless his heart, thinks that EVERYTHING I make is just amazing! Even when I burnt rusks (who burns rusks?) he found something nice to say about them. Not being a huge coconut fan, his response to the Vanilla Coconut Drops was, ‘mmm, they’re nice!’ Nice? Although he helped us polish off the entire batch in one sitting, I thought I would secretly make him another batch, but this time without the coconut ….
I took the delicious gooey sweet mixture of tahini, honey and coconut oil from the Vanilla Coconut Drops recipe and added nuts, seeds and anything else I had in my pantry jars to replace the 2 cups of coconut. Not only are these jam-packed with energy and goodness, they also scored me mega brownie points with hubby! His feedback, ‘best thing you’ve EVER made!’
Ingredients
½ cup tahini (sesame seed butter)
½ cup raw honey (or agave nectar or maple syrup)
½ cup organic coconut oil (melted)
1 teaspoon vanilla extract
Pinch of Himalayan salt (or sea salt)
1-2 Cups of the following
Mixed seeds (I use sesame, pumpkin, linseed, sunflower seeds)
Mixed nuts (I use pecan, cashews, almonds)
Raisins (optional)
Goji berries (optional)
White dried mulberries (optional)
Method
I slowly melt coconut oil in a stainless steel mixing bowl resting over a pot of hot kettle water.
Once the coconut oil is liquid, add the tahini, honey, vanilla and salt and stir until well mixed.
Pulse the nuts and seeds in a food processor (or coffee grinder) for a few seconds to break them up slightly.
Mix in the nuts, seeds, raisins, superfoods and berries to the mixture.
Scoop the mixture into a loaf tin (I use a silicone loaf pan) and flatten.
Place in the freezer.
Once set, cut into bars.
Best kept in the freezer (if they last that long!)
