Mango Ice Lollies
Who says ice lollies are for kids? My husband has been begging me to make ice lollies for so long now, and although it is the start of winter (and with one of the biggest storms about to hit in centuries) I finally gave in.
With frozen mango in the freezer, I went with a creamy coconut and mango flavour.
Although the ice lollies only have 4 ingredients, and are really quick and easy to make, there is one difficulty – and that’s being patient. The freezer was opened every few hours in hope that the lollies were frozen, but the truth is they need to be in the freezer at least over night to be firm enough to take out of their mould.
The moment the family got home from the school run, the boys ran to the freezer and grabbed one each and of course hubby and I enjoyed one too … bringing out the inner child in us.
Ingredients
(Makes about 6 – depending on your mould)
1 frozen banana
1 cup frozen mango
½ cup of coconut milk
1 tablespoon of maple syrup / honey
Method
Simply place all the ingredients into a blender and blend until smooth.
Taste and add more sweetener if necessary.
Pour into an ice lolly mould and place in the freezer until frozen.
Best to leave in freezer overnight.
