Double Chocolate Cookies

Feast or famine! It goes like that … one week I will be so inspired to try new recipes, and cook and bake all week, then other weeks, I’m running around like a chicken without a head and can’t seem to find a minute to be in my favourite room of the house … the kitchen.

So after a mammoth week last week, it was a breathe of fresh air to have a weekend of no plans … instead, doing the things we enjoy, like having time to play guitar, sipping hot tea in front of the roaring fire and spending many fun hours in the kitchen cooking and baking.

And boy do I have some yummy recipes to share with you.

These heavenly dark chocolate cookies are absolutely moreish! I managed to have one, and before I knew it, the boys had gobbled up the whole batch! Next time I think I’ll need to double the recipe.

Ingredients

(makes about 16 cookies)

1 cup almond flour

1 tbsp coconut flour

1 egg

5 tbsp coconut oil

3 tbsp raw organic honey

1/4 cup melted dark chocolate (I use 70% Lindt)

1/4 cup cacoa powder

1 tsp vanilla extract

1/8 tsp Himalayan sea salt

1/4 tsp baking soda

¼ cup chocolate chips (I mixed white choc chips & broke up 4 of the Lindt choc blocks & placed on top of the cookies)

Method

Preheat oven to 180 degrees C (350 F)

Line baking sheet with baking paper or flour the baking sheet

Mix dry ingredients in one mixing bowl (except chocolate chips)

Mix wet ingredients in another mixing bowl

Combine wet and dry ingredients

Fold in chocolate chips 

Scoop spoonful at a time onto baking sheet

Bake for 15 minutes

Let cool on cooling rack

Serve with a fresh pot of tea and enjoy a warm chocolate oozing cookie (or two if you’re quick enough!)
