Chia Chocolate Mousse
If a rich creamy chocolate mousse is your kind of dessert (or breakfast) then you’re gonna love this one!
It sure tastes even better than the real thing!
I have posted a few chia pudding recipes but this one is undoubtedly the best I’ve tried! The secret? Blend the chia seeds and the other ingredients to make a smooth and creamy mixture before setting. That way you don’t get the globby gel-like texture.
I wish I could have captured the delight in my hubby’s face when I told him that he could have chocolate mousse for breakfast! Priceless!
Ingredients
1½ cups coconut milk (or almond milk)
170g (about 6 large) pitted medjool dates
½ cup raw cacao powder
⅓ cup chia seeds
2 teaspoons vanilla extract
½ teaspoon ground cinnamon
¼ teaspoon Himalayan salt or sea salt
Method
Combine coconut milk, dates, cacao powder, chia seeds, vanilla, cinnamon and salt in a blender.
Blend until very smooth (about two minutes).
Transfer the mixture to a glass jar or bowl, cover and refrigerate overnight.
Yep, it’s that easy!
Notes
And for a fun way to serve the mousse? Add sliced banana to a Consol Jar or glass, then spoon Almond Butter next, followed by the mousse. Top with mixed berries, gojis and cacao nibs and drizzle a little maple syrup over the berries. I’m drooling!
