Beetroot smoothie bowl

I am honestly crazy about this smoothie bowl. I go to bed at night dreaming about it. I wake up thinking about it.

The flavours burst forth with every mouthful. The crunch of the toasted coconut chips and the gooey tart goji berries create such a taste explosion.

Ingredients

 

2 frozen bananas

½ cup coconut milk

¼ medium sized beetroot

Half thumb size of ginger

1 tablespoon goji berries

Toppings (optional):

Toasted coconut chips

Goji berries

Chia seeds

Black sesame seeds

Cacao nibs

Method

 

Blend all smoothie ingredients together until smooth.

Pour into a bowl.

Top with your favourite toppings.

Serve.

      Hello! Good question. I use raw beetroot, not cooked. Enjoy!
